First, there is Naudo.  This guy is a true genius.  He composes covers of famous songs as instrumental fingerstyle acoustic guitar pieces.  He does everything from Eric Clapton, Led Zeppelin, The Eagles, etc.   Very good, tasteful covers.  

Another one is Carlos Vamos.  This guy has the best acoustic tapping technique I’ve ever seen.  He does an excellent cover of Jimi Hendrix’s Little Wing, here.

Also there’s Stanley Jordan, who is known for his electric jazz tapping technique.

I also stumbled across an acoustic version of a song by Hurt called Rapture, here.  It’s just about the greatest acoustic version of any some I’ve ever heard.
